Kimchi Cabbage Officially Recognized in Global Codex Update0A major step was taken recently to strengthen the global status of Korean food. At the 48th Codex Alimentarius Commission meeting, held in Rome from Nov. 10 to 14, the term “kimchi cabbage” was officially added to the world standard for kimchi ingredients. Until now, the Codex list of vegetables referred only to Chinese cabbage. With the revision, the category now includes Chinese cabbage, kimchi cabbage, and napa cabbage.

South Korean officials said they pushed for the change after confirming that “kimchi cabbage” and “napa cabbage” were increasingly used in scientific papers and trade practices. They said the update reinforces Korea’s identity as the origin of kimchi and strengthens international recognition of its traditional food culture.

The meeting also approved a new project to develop a global standard for dried seaweed (gim), which had previously been recognized only as an Asian regional standard. With worldwide consumption of Korean seaweed rising, officials said an international standard will improve product quality, unify safety rules, and support the nation’s goal of surpassing $1 billion in annual exports.

South Korea also secured a leadership role at Codex. The nation was elected to chair the Codex Committee on Processed Fruits and Vegetables, giving it greater influence in shaping future food standards and supporting the growth of K-food worldwide.
